  Cooking Teachers’ SIG Meets at Ramekins

On a rainy Tuesday evening in late January, members of the Cooking Teacher SIG arrived at Ramekins Culinary School in Sonoma, eager to tour the facility and learn tips to make their cooking classes fun, rewarding and successful. Mary Karlin and Lisa Lavagetto, Ramekins executive staff, could not have been more welcoming and willing to share their knowledge of cooking class management and tips for success.



After an informative tour of two kitchens and the B & B Guest rooms, we adjourned to the “Great Hall” where Mary and Lisa attempted to answer as many of the 45 questions that René Matthew had collected from SIG members in advance. A sample included:

People attend classes based on the menu, and Protein Sells!
 
Subject- and menu-driven classes are the most popular, followed by instructor-driven.

People want to learn to cook for entertaining or special occasion “indulgences”, (no healthy or vegan, Please!).

Hands-on classes are much more popular than demo classes – people want to get their hands into the process, not just watch a chef do “show and tell.”

The most popular cuisine is – you guessed it – Italian, closely followed by Mediterranean, then Asian

Mary and Lisa give a great deal of thought to class menus and portion sizes, as well as matching the type of class to the day of the week and the season.



A special “thank you” to SFPFS President Joyce Jue for arranging this evening. We encourage anyone who has not had a chance to tour Ramekins, or taken a class there to head on up to Sonoma and enjoy the impressive and well-equipped facility.
